Korean Kimchi Mac & Cheese

Mac and cheese. You know the drill. Creamy, comforting, impossible to leave alone.

But we thought it could do with a little Korean attitude.

So we started with a proper three-cheese Mornay, added our house-made bok choi kimchi for its fermented tang, then brought in the gochugaru for a warm chilli kick.

And because we don't believe in doing things by halves, there's your choice of succulent pork belly or slow-cooked beef short rib, finished with savoury free-range chicken floss.

A little familiar. A little unexpected. Very difficult to share.

We've taken care of the fermenting, slow cooking and sauce-making. You get all the ingredients, carefully prepared and ready to bring together for one gloriously indulgent Korean-inspired mac and cheese.

Tender pasta, part-cooked and ready to soak up every bit of our cheese sauce.

02 Three-Cheese Mornay

A silky, chef-made béchamel enriched with three cheeses. Rich, smooth and properly comforting.

03 House-Made Bok Choi Kimchi

Our own fermented bok choi, bringing tang, gentle crunch and that unmistakable kimchi depth.

04 Gochugaru Chilli Blend

Korean chilli warmth with deep savoury notes. Add a little or go all in.

05 Pork Belly or Beef Short Rib

Your choice of indulgent pork belly or tender, slow-cooked beef short rib.

06 Free-Range Chicken Floss

A delicate, savoury finishing sprinkle. The little extra that makes a difference.

03 · Finish at home

A little heat. A lot of comfort.

We've done the complicated bits. The kimchi's fermented, the Mornay's made and your meat is ready for its final flourish.

All that's left is to bring everything together, get the cheese beautifully glossy and make dinner happen.

Finish the macaroni

Cook the part-boiled macaroni according to the instructions supplied.

Make it cheesy

Gently warm the Mornay and fold through the macaroni until glossy and coated.

Bring the Korean kick

Add the kimchi and your preferred amount of gochugaru chilli blend.

The final flourish

Heat your chosen meat thoroughly, add to the pasta and finish with chicken floss.

The chilli blend comes separately, so you can make things as mellow or as fiery as you fancy. Follow the storage, use-by and cooking instructions supplied with your kit.
